Some Benefits of Sourdough

The natural fermentation process of sourdough and the preparation of sourdough provides several benefits. Some include...

- It contains less gluten than normal bread

- It is lower on the glycemic index and has a lower glycemic load meaning it helps regulate blood sugar.

- More nutrient dense as bacteria releases enzymes that destroys phytic acid which encourages nutrient absorption.

- It contains a longer shelf life as bacteria maintains stability and does not require preservatives.

- Because of the natural process of fermentation, it is easier to digest making it gut friendly and so much more!!

Difference between Sourdough Starter and Sourdough Discard

Sourdough starter and sourdough discard are of the same "starter" which is a mixture of flour and water. Starter also known as "active" starter is the "fed" portion of a starter that has produced the wild yeast and bacteria to produce a leavening agent for you baked goods. Discard is the "unfed" portion of the starter that has not yet produced the wild yeast and bacteria to produce a leavening agent, but still providing a soft, chewy texture.

How to store a loaf of sourdough

Place loaf in a dry place and eliminate expose to air as much as possible to prevent it from becoming stale. Some examples are bread bags, plastic bag, bread box, plastic wrap, foil, dome cake pan, or even a tea towel.

How to freeze and reheat a loaf of sourdough

If you freeze your sourdough bread as a loaf to reheat place frozen loaf under running water and then place in oven at 400 degrees for 10-15 minutes.

How to revive a stale loaf of sourdough

Run stale sourdough under running water till saturated, then bake at 300 degrees for 10ish minutes. Let cool and slice.
